After three weeks on Phase I, we recommend that you switch to
Phase III of The Coconut Diet, which includes limited amounts of
whole grains, fruit, and vegetable starches. If you choose to
incorporate Phase II—The Cleansing Programs—you will follow this
phase of the meal plan during those four weeks. When you have
completed the cleansing weeks, you will stay with Phase III
until you have lost the weight you desire.
During Phase III you will gradually introduce some of the
healthiest carbs—whole grains, fruit, and some starchy
vegetables such as acorn squash and sweet potatoes—into your
weekly menu plan.
We recommend that you start
reintroducing these foods with no more than two to three whole
grain servings, two to three fruit servings, and two starchy
vegetable servings per week, as desired. This will slow your
weight loss, but you should still lose on average two pounds a
week. However, if you have any of the conditions discussed in
Special Conditions, such as Candida albicans,
hypoglycemia, or digestive problems, then you will want to avoid
these foods until your condition is completely corrected.
As you develop more lean tissue,
which burns more calories even at a resting heart rate, balance
blood sugar, and correct insulin resistance, you can add a few
additional servings of the healthy carbs per week, providing you
continue to lose the weight you desire. You will continue to
avoid all refined carbs.
There may be times when you indulge in too many carbs or
foods that are off the list at parties, special events, or on
vacation. Or you may experience times of emotional binge
eating. As a result, you may put on a few pounds. The most
important point to remember at this time is that you don’t throw
caution to the wind by telling yourself you’ve “blown it” and
now you may as well eat whatever you want now. This is time to
get right back on the program. At this point we recommend that
you go back to Phase I. You may want to incorporate the
One-Day Juice Fast as a weight-loss kick-start, which will also
help cleanse your body.
