Low-Carb Vegetable Juice Recipes for the One-Day Juice Fast

Morning Energy Cocktail

1 cucumber, peeled if not organic

1/2 lemon, peeled

2 carrots, scrubbed

2 stalks celery

Handful parsley

1-inch piece ginger root

Cut the cucumber in half and push half the cucumber through the juicer. Follow with the lemon and carrots, then the other ingredients and end with the other half of the cucumber.  Stir and drink as soon as possible.

Spicy Tomato on Ice

1 vine-ripened tomato

1 cucumber, peeled if not organic

2 stalks celery

Dash of hot sauce

Ice cubes (optional)

Cut the tomato into chunks that will fit your juicer and the cucumber in half, lengthwise.  Juice the tomato, cucumber, and celery.  Add a dash of hot sauce to taste and stir.  Serve over ice, as desired.

Cucumber Avocado Cold Soup

1 1/2 cups fresh cucumber juice from 2 cucumbers

1/4  cup fresh lemon juice

1 tablespoon Virgin Coconut Oil

1 tablespoon chopped green onions

1 tablespoon chopped red onion

1 tablespoon chopped fresh parsley

1 large ripe avocado, peeled and seeded

1 large or 2 medium garlic cloves, minced

3 sprigs fresh basil, chopped (optional)

1 teaspoon tamari or light soy sauce

1 to 2 teaspoons curry powder, or to taste

1/2 teaspoon ground cumin

  1. Combine the juices and remaining ingredients in a blender and puree until smooth.  If the soup is a bit too thick, you may add a little more cucumber juice/and or lemon juice, depending on taste.

  2. Pour the soup into bowls and serve cold.  You may garnish with fresh basil or any other fresh herbs of choice.

Serves 2

Note: If you don’t have a good juicer, you need one that is easy to clean and one that has a good motor (1/2 hp motor).  We recommend the Juice Lady JuicerYou can purchase it here.
