ok, I found this recipe on the net for oatmeal cookies which had oatmeal/flour combo. I've played with making them gluten free, and grinding the oatmeal into oat flour and using straight oat flour but they end up falling apart. BUT.. they work pretty good as bars. I split them into 4 bg bars and eat them for breakfast getting about 3 TBS of coconut oil.

3/4 cup coconut oil
1/4 cup sugar (or 1-1/2 tsp. Stevia)
1/3 cup brown sugar
1 egg
1 tsp. pure vanilla extract
2 tsp. strong coffee or coffee brandy
1/2 tsp. baking powder
1/4 tsp. sea salt
2 1/4 cups oat flour
3/4 cup semi-sweet chocolate chips
1/2 cup of dried unsweetened coconut

Preheat oven to 325F. In large bowl, by hand, beat oil and sugars, beating till smooth. Add egg, vanilla, coffee, baking powder and sea salt, beating till smooth and well combined. Stir in flour till it's absorbed, add chips and coconut till ingredients are well distributed. spread out in a 13 x 9 pan Bake 10-12 minutes, or till just barely done. Cool on wire racks. Yield: 4 big bars

I'm still experimenting with this, I made one batch with 1/2 sugar equivalent of stevia with a TBS of molasses that turned out good. I'd like to up the protein content in this, maybe replace some of the oat flour with whey protein powder?? anyway have fun with this recipe and any ideas you have to modify it.
