Lowfat coconut milk will be coconut milk with the Virgin Coconut oil removed or decreased. This type of product will not give you as much vco as regular coconut milk. The oil (aka fat) is what gives the health benefits....it contains lauric acid and it is very healthy. I only use full fat coconut milk.

I don't think that there is anything wrong with the lowfat coconut milk from Trader Joes. My understanding is that it is just coconut milk diluted with water so that the taste is more bland. You can still use it in any recipes, it just won't be as creamy as regular coconut milk. My mother-in-law prefers the light coconut milk because it doesn't have a strong flavor. She uses it in her pie crust and it is awesome!

I have a few cans from my local Trader Joe's...of lowfat coconut milk, they didn't have any regular kind. It's very tasty but then I realize it doesn't have the coconut/fat oil in it like regular coconut milk should so that means it's not HEALTHY right?
opinions on this??? If the FAT is taken out of coconut milk, the health went away????
